The stock has been cooking for over 18 hours. The best ramen base starts out for us with the ham bones and whatever meat stock we have, you add the vegetables and let it just simmer and simmer and simmer. At the end you add the final ingredients and whalla, you got some world class ramen. Joel was guarding the left over stock. You make sure that you do not eat it all, because the extra becomes the ingredients for the next pot. Koinonia Ramen, absolutely the best!
